Red Rooster Inn’s Blueberry French Toast

Ingredients

  • 12 slices Day-Old Bread
  • 2 8-oz pkgs Cream Cheese
  • 1-1/2 c blueberries
  • 12 large Eggs beaten
  • 2 c milk
  • 1/3 c brown sugar
  • 1-1/2 tsp cinnamon
  • 1/2 c sugar
  • 2 tblsp water

Instructions

  1. Cut bread into 1 inch cubes. Place in baking dish sprayed with pam. Place 1/2 of bread cubes into baking dish. Cut cream cheese into 1 inch cubes. Disperse cream cheese chunks evenly across top of bread. Cover with 1 c of blueberries and remaining bread. In a large bowl, mix eggs, milk, brown sugar and cinnamon until well mixed. Pour over bread mixture in baking pan. Cover and refrigerate over night. Remove from refrigerator 30 minutes before baking. Preheat oven to 350 F. Cover and bake 30 minutes. Uncover and bake another 25-30 minutes or longer until golden brown and set in the middle.
  2. Take remaining 1/2 cup blueberries and 1/2 cup sugar and 2 tblsp of water and stir in small saucepan over medium heat. Cook until sugar is dissolved and berries have begun to pop. Use this syrup warm to serve with blueberry french toast.
