Italian Breakfast Casseroles
Ingredients
- 1/2 lb fully cooked ? Thinly sliced
- 8 Eggs lightly beaten
- 1/2 c mozzarella cheese Shredded
- 2 tb Cooking oil
- 1 tb Butter or margarine
- 2 c spaghetti sauce Prepared
- 4 md Red potatoes sliced
- 1/2 c Cheddar cheese shredded
Instructions
- In a skillet, fry potatoes in oil until tender, about 10-15 minutes. Place in the bottom of four individual 16-oz. baking dishes. In the same skillet, scramble eggs in butter until set; spoon over potatoes. Top with ham. Pour 1/2 cup spaghetti sauce into each casserole; sprinkle with cheese.
