Blueberry Apple Pancake Shake-Up (4 Pts)

Ingredients

  • 1/3 cup regular oats (not instant)
  • 2 Tablespoons dry pancake mix
  • 1/3 cup peeled chopped apples
  • 1/4 cup blueberries
  • 1/4 cup egg beaters
  • 1 Tablespoon fat-free cottage cheese
  • 1/4 teaspoon vanilla extract
  • 1 Tablespoon splenda
  • dash of salt

Instructions

  1. Place all ingredients except for the blueberries and apples in a medium
  2. bowl. Add 3 Tablespoons of water and stir until thoroughly mixed.
  3. Gently fold in apples and blueberries.
  4. Over medium heat, in a large pan coated with nonstick spray, evenly pour
  5. batter to form 3 pancakes. Once pancakes begin to look solid (after about
  6. 3 minutes), gently flip.
  7. Cook for 3 additional minutes, or until both sides are lightly browned and
  8. insides are cooked through.
