Breakfast Loaf
Ingredients
- 2 Cups Flour
- 2 Tsp Baking powder
- 1 Tsp Baking soda
- 1/2 Tsp Allspice, cinnamon, nutmeg
- 3/4 Cup Sugar optional
- 1/2-1 Cup Unsweetened apple sauce
- 1 Egg
- 1 Cup Wholepberry cranberry sauce
- 1/2-1 Apple chopped
- 1 Juice from lemon
- 1/2-1 Bananas
- 1 Cup Crushed walnuts and/ or other nuts/seedspre
Instructions
- Pre-heat oven to 350 degrees. Spray a loaf pan with a cooking spray.
- Put all dry ingredients in a large bowl and mix together.
- Add:
- Sugar, if using
- Apple sauce
- Mix together so that sugar and apple sauce adhere to flour mixture (slightly lumpy)
- Make a hole in the middle and the mixture and add
- 1 beaten egg
- Cranberry sauce
- Apple chopped
- Banana, (mashed in lemon juice prior to adding)
- With a fork, mix together the wet ingredients, and then mix into dry ingredients
- Add nuts and seeds.
- Other items you can add - pear, peach, blueberries, strewed rhubarb, strawberries, zucchini, carrots
- Bake for 45 mins. Best to check at 30 mins.
