Breakfast Loaf

Ingredients

  • 2 Cups Flour
  • 2 Tsp Baking powder
  • 1 Tsp Baking soda
  • 1/2 Tsp Allspice, cinnamon, nutmeg
  • 3/4 Cup Sugar optional
  • 1/2-1 Cup Unsweetened apple sauce
  • 1 Egg
  • 1 Cup Wholepberry cranberry sauce
  • 1/2-1 Apple chopped
  • 1 Juice from lemon
  • 1/2-1 Bananas
  • 1 Cup Crushed walnuts and/ or other nuts/seedspre

Instructions

  1. Pre-heat oven to 350 degrees. Spray a loaf pan with a cooking spray.
  2. Put all dry ingredients in a large bowl and mix together.
  3. Add:
  4. Sugar, if using
  5. Apple sauce
  6. Mix together so that sugar and apple sauce adhere to flour mixture (slightly lumpy)
  7. Make a hole in the middle and the mixture and add
  8. 1 beaten egg
  9. Cranberry sauce
  10. Apple chopped
  11. Banana, (mashed in lemon juice prior to adding)
  12. With a fork, mix together the wet ingredients, and then mix into dry ingredients
  13. Add nuts and seeds.
  14. Other items you can add - pear, peach, blueberries, strewed rhubarb, strawberries, zucchini, carrots
  15. Bake for 45 mins. Best to check at 30 mins.
