Double Bacon Breakfast Cup

Ingredients

  • 4 slices bacon partially cooked
  • 8 medium eggs
  • 1/8 cup sweet potatoes shredded
  • 1/8 cup bell pepper sliced/any color
  • 1/2 cup mushrooms chopped
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions

  1. Preheat oven to 350. In a large bowl, whisk eggs. Mix in sweet potatoes, bell peppers, mushrooms, garlic, salt and pepper. Line muffin pan cups with partially cooked bacon slices. Pour egg mixture into the bacon “cups”, acting as though the bacon is the cup. Bake 20-25 minutes or until inserted toothpick comes out clean.
