Afternoon Tea Scones

Ingredients

  • 2 cups white flour
  • 2 cups wheat flour
  • 4 teaspoons double-acting baking powder
  • 2 tablespoons sugar
  • 2 sticks unsalted butter cold
  • 4 large Eggs
  • 4 tablespoons milk
  • 1 cup currants or similar

Instructions

  1. In food processor process the flour, the baking powder, the sugar, and the butter until the mixture resembles coarse meal.
  2. In a small bowl whisk together the eggs and the milk and add the mixture to the processor and blend the dough pulsing the motor until it is just combined.
  3. Turn the dough out onto a floured surface and knead in the currants. Roll the dough to 1/2 inch thick and with a 2 inch cutter cut out rounds and transfer to a greased baking sheet.
  4. Bake the rounds in the middle of a pre-heated 425 degree oven for 15 minutes or until they are pale golden.
