Afternoon Tea Scones
Ingredients
- 2 cups white flour
- 2 cups wheat flour
- 4 teaspoons double-acting baking powder
- 2 tablespoons sugar
- 2 sticks unsalted butter cold
- 4 large Eggs
- 4 tablespoons milk
- 1 cup currants or similar
Instructions
- In food processor process the flour, the baking powder, the sugar, and the butter until the mixture resembles coarse meal.
- In a small bowl whisk together the eggs and the milk and add the mixture to the processor and blend the dough pulsing the motor until it is just combined.
- Turn the dough out onto a floured surface and knead in the currants. Roll the dough to 1/2 inch thick and with a 2 inch cutter cut out rounds and transfer to a greased baking sheet.
- Bake the rounds in the middle of a pre-heated 425 degree oven for 15 minutes or until they are pale golden.
