Co-cinn-scotch-o-nut-meal Cookies Recipe

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2t vanilla
  • 1 cup flour
  • 1t baking soda
  • 1/2t salt
  • 2 cups oats
  • 3/4 cup cinnamon chips
  • 3/4 cup butterscotch chips
  • 1/2 cup macadamia nuts, chopped
  • 1/2 cup shredded coconut

Instructions

  1. Combine oats, chips, nuts and coconut in large bowl and set aside.
  2. Beat butter and sugars together until smooth and creamy.
  3. Add eggs, one at a time and mix well between each
  4. Add vanilla and mix to combine.
  5. Add flour, baking soda and salt and mix until just combined.
  6. Add chips/nuts mixture and fold in until just combined.
  7. Drop by tablespoons onto cookie sheets or baking stone and bake at 350 for about 8-10 minutes until golden brown around edges.
  8. Cool slightly on stone then carefully remove to cooling rack to cool completely.
