Banana’s Foster Oatmeal Pancakes Recipe
Ingredients
- As2 cups milk
- 1 1/2 cups regular oatmeal, uncooked
- 1 cup all purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 3 tsp sugar
- 2 eggs, beaten
- 1/3 cup oil
- Nonstick cooking spray
- Banana’s Foster Sauce:
- 1/2 stick of butter
- 1 cup of dark brown sugar
- 1/2 tsp cinnamon
- 1/4 cup banana liquer
- 4 banana’s cut into 1 inch rounds
- 1/2 cup chopped pecans
- 1/4 cup dark rum
Instructions
- Pour the milk over the oatmeal in a mixing bowl. Let stand for 5 mins.
- In a seperate bowl, mix together the flour, baking powder, salt and sugar.
- Stir the beaten eggs into the oatmeal mixture.
- Add the dry ingredients, stir in the oil.
- Coat the frying pan with non stick cooking spray, heat until a drop of water will bounce around the pan.
- Spoon 1/4 cup of batter into the pan. Cook until the edges are full of broken bubbles, but before the center bubbles break, aboutr 2 or 3 mins.
- Turn the pancakes over with a spatula.
- Cook the second side until the edges are dry, about 1 to 2 minutes.
- Sauce:
- Combine butter, sugar and cinnamon in a skillet. Stir constantly!.
- Add banana liquer and bananas and pecans.
- Continue to cook until bananas begin to turn brown.
- Add the rum, and ignite the pan to burn the alcohol away.
- When the flames subside, spoon sauce over pancakes. Serve immediately.
